During the second half of the nineteenth century, several architectural proposals appeared in the United States for both housing and urban planning that included communal spaces and collective domestic services. During this period of intensive industrialisation and urban growth, both housing and collectivity were understood as tools for social transformation. By the end of the century, cities like New York were filled with apartment houses that lacked individual kitchens and instead were supplied with domestic services such as collective kitchens and dining rooms, centralised vacuuming systems, nurseries, shared maids, etc. By introducing the concept of collective domestic services, these projects displaced some elements normally found within the home and moved them into the public sphere. The elimination of the kitchen from the home was central to the construction of the collective.

Anna Puigjaner
is an architect, editor and researcher. Co-founder of the architectural office MAIO, which works on spatial systems that allow theoretical and practical positions converge. She is currently in charge of running the magazine Quaderns d’Arquitectura i Urbanisme, teaching at the Barcelona School of Architecture ETSAB/ETSAV – UPC, and researching in the group HABITAR – UPC. She has also lectured at MET Museum, GSAPP Columbia University, Yale University, Berkeley University, UCLA, FAU Lisboa and Brussels UCL-LOCI, among others. MAIO’s works have been published in international magazines such as Domus, A10, Frame and Detail among others; exhibited at Biennale di Venezia, Chicago Architecture Biennial, MOMA and at Art Institute of Chicago; and awarded several times including FAD Award 2016 for Ephemeral Interventions and FAD Award 2015 for Thought and Criticism. Her personal research is focused on Kitchenless Cities, housing with collective kitchens, where the elimination of the kitchen from the house allows the domestication of the urban sphere. Her project has been recently finalist of the Rolex Mentor & Protégé Initiative, and awarded with the 2016 Wheelwright Prize, Harvard GSD.
